Blueberry Muffins
Official State Muffin of Minnesota and Virginia
Cooking and preparation time: 35 minutes
Yields: 12 muffins
Ingredients
- 1/4 cup butter
- 2 eggs
- 1/2 tsp. salt
- 1 cup sugar
- 2 cups flour
- 2 tsp. baking powder
- 1 tsp. vanilla
- 1/2 cup lowfat or skim milk
- 2 cup fresh cleaned blueberries
Directions
- Preheat oven to 350 degrees F.
- Spray muffin pan with Baking Pam, or grease pan.
- Combine butter, eggs, salt, and sugar.
- Mix flour with baking powder and sift into first mixture, add milk.
- Blend in vanilla. Fold in blueberries.
- Pour into muffin pan and bake for 25 minutes. Shorten time by 5 minutes for dark muffin tins.
