Blueberry Muffins – Official State Muffin of Minnesota and Virginia

The word muffin probably comes from the French word “moufflet,” which means soft bread, although the American muffin has a unique character all it”s own.  Both the state of Minnesota and the state of Virginia have adopted the Blueberry Muffin as their official State Muffins

Blueberry Muffins

Official State Muffin of Minnesota and Virginia

[ad#Google 250 x 250 right]Cooking and preparation time: 35 minutes

Yields: 12 muffins

Ingredients

• 1/4 cup butter
• 2 eggs
• 1/2 tsp. salt
• 1 cup sugar
• 2 cups flour
• 2 tsp. baking powder
• 1 tsp. vanilla
• 1/2 cup lowfat or skim milk
• 2 cup fresh cleaned blueberries

Directions

1. Preheat oven to 350 degrees F.
2. Spray muffin pan with Baking Pam, or grease pan.
3. Combine butter, eggs, salt, and sugar.
4. Mix flour with baking powder and sift into first mixture, add milk.
5. Blend in vanilla.  Fold in blueberries.
6. Pour into muffin pan and bake for 25 minutes. Shorten time by 5 minutes for dark muffin tins.
