Popcorn was not mentioned in early farm papers and seed trade catalogs until around 1880, but once the American public discovered it, popcorn’s popularity quickly grew. Nearly all of the world’s popcorn production is in the United States, with 25 states growing the crop. Over one fourth of the national production is in Nebraska, and Indiana produces only slightly less. Other major popcorn-producing states are Illinois, Ohio, and Missouri. Scholars agree that corn, and popcorn, originated in the Americas. Precisely how it originated, however, is a topic of debate.

The oldest ears of popcorn ever found were discovered in the Bat Cave of west central New Mexico in 1948 and 1950. Ranging from smaller than a penny to about 2 inches, the oldest Bat Cave ears are about 4,000 years old.

In tombs on the east coast of Peru, researchers have found grains of popcorn perhaps 1,000 years old. These grains have been so well-preserved that they will still pop.

In 1519, Cortes got his first sight of popcorn when he invaded Mexico and came into contact with the Aztecs. Popcorn was an important food for the Aztec Indians, who also used popcorn as decoration for ceremonial headdresses, necklaces and ornaments on statues of their gods, including Tlaloc, the god of rain and fertility.

An early Spanish account of a ceremony honoring the Aztec gods who watched over fishermen reads: “They scattered before him parched corn, called momochitl, a kind of corn which bursts when parched and discloses its contents and makes itself look like a very white flower; they said these were hailstones given to the god of water.”

Writing of Peruvian Indians in 1650, the Spaniard Cobo says, “They toast a certain kind of corn until it bursts. They call it pisancalla, and they use it as a confection.”

In southwestern Utah, a 1,000-year-old popped kernel of popcorn was found in a dry cave inhabited by predecessors of the Pueblo Indians.

There are 333 Illinois farms that grow popcorn on 47,000 acres, making Illinois the third largest grower of the product.

Corn probably originated in Mexico about 5,000 years ago. It is estimated that Native Americans in Illinois started growing corn about 100 A.D.

Popcorn pops because its kernel contains a small drop of water that suddenly expands when exposed to high heat. The kernel turns inside-out as it explodes.

The Symbol
Second and third grade students and their teacher, Fran Hollister, at Cunningham Elementary in Joliet proposed popcorn as the official State Snackfood of Illinois, and it was sponsored by State Senator Larry Walsh. The Official Illinois Snackfood was voted a State Symbol in 2003.

According to the Illinois State Museum:

The state animal was selected by a vote of Illinois schoolchildren in 1980. Candidates were nominated by the General Assembly and the Illinois State Museum. The children selected the White-tailed Deer, and a bill, effective January 1, 1982, was passed by the General Assembly and signed into law by Governor James R. Thompson.

(Beef can be substituted for the deer meat in this recipe.)

It is important to note that white-tailed deer meat can and is easily substituted for beef in recipes using tomatoes or tomato juice. Ground white-tailed deer meat makes for a tasty burger, but most people in our area like white-tailed deer meat either in a sausage form or in a stew.

White-tailed deer meat is lean and tends to be a chewier, tougher red meat than a finely fat-marbled red meat such as beef or pork. To tenderize white-tailed deer meat (also known as venison) tomato sauce or tomato juice is often used.

Slow cooking white-tailed deer meat (venison) in a slow cooker is an ideal solution for tenderizing and cooking this meat at the same time. The process of slow cooking breaks down the toughness of meat; thus a slow cooker recipe using tomatoes, salsa or tomato juice are ideal!

People who are “meat and potato” eaters tend to especially like this soup. The tomatoes in the salsa helps to tenderize the deer meat.

This comfort soup satisfies the soul. Slow cooking and the tomatoes both help to tenderize the white-tailed deer meat.

Ingredients for Venison Barley Soup

1 (48-ounce) can beef broth

1 (28-ounce) can crushed tomatoes

1-1/2 pounds lean, cooked white-tailed deer steaks, cut into small, bite-size pieces (or grilled eye of round can be substituted.)

1 cup frozen chopped onion

2 cups frozen sliced carrots

1 cup chopped celery

1/2 cup quick-cooking barley, not cooked

Directions

Spray a slow cooker with nonfat cooking spray.

In the slow cooker mix together the broth, tomatoes, venison, onion, carrots, and celery.

Cover and cook on high for 5 hours or on low for 8 to 10 hours.

Stir in the barley.

Cover and cook for an additional 10 to 12 minutes or until the barley is tender.

Note: This is also a great way to use leftover beef. I especially like using steak that’s been cooked on the grill. You can also substitute 1 1/2 pounds ground eye-of-round beef that has been browned in a skillet and drained.
