<p>North Carolina is the largest producer of sweet potatoes in the nation harvesting over four billion pounds of the vegetable in 1989. The sweet potato is high in vitamins A and C and low in fat and was grown in North Carolina before the European colonization of North America.</p>
<p>The sweet potato was officially designated the State Vegetable by the General Assembly of 1995. (Session Laws, 1995, c. 521).</p></blockquote>

<li>In a large bowl, lightly mix all the ingredients except the marshmallows. </li>
<li>Spray a 9 inch casserole dish with cooking spray.</li>
<li>Pour the custard and top with a half bag of mini marshmallows.</li>
<li>Bake for about a half hour. </li>
<li>Keep warm for service.</li>

<p>Sugar Maple (Acer saccharum), became the official tree of both Wisconsin and Vermont in 1949. New York followed suit and adopted it as the official state tree in 1956.  Vermonters enjoy the sugar maple so much that as of April 26, 1994, the sugar maple went into effect as their Official State Flavor.</p>
<p>One of the benefits of having the Sugar Maple as the state tree is being able to enjoy its delectable sugar maple candies in the fall</p>
<blockquote><p>Each year, usually in March, Indians would go to collect sap from maple trees and make sugar and maple syrup. Native American&#8217;s discovered long ago that maple trees have a sweet sap that can be drained from the tree and boiled to make syrup and sugar. They used an adze (like an ax) to make a cut in the maple tree&#8217;s bark. A short stick was pushed into the opening and the sap ran down the stick and into a bucket (usually a bark pan or wooden bowl) below.</p>
<p>Mothers would make candy for their children by folding little cones of thin birch bark and filling them with sugar. They also made molded candies. First they would carve the shapes of animals, moons, and stars into wooden molds. Then they pressed soft sugar into the molds. When the sugar hardened, they wrapped it in thin pieces of birch bark.</p>

<li>1/3 cup butter or margarine, softened </li>
<li>1/3 cup maple syrup (or maple-flavored pancake syrup) </li>
<li>1/2 teaspoon salt</li>
<li>1 pound powdered sugar</li>

<li>Large mixing bowl</li>
<li>Large wooden spoon</li>
<li>Cookie sheet (covered with aluminum foil or parchment or wax paper)</li>
<li>Plastic candy molds, if you have some</li>

<p><a name="Directions+for+Maple+Sugar+Candy%3A"></a><H3>Directions for Maple Sugar Candy:</H3></p>
<ol>
<li>Wash your hands well and get all your ingredients and utensils together.</li>
<li>Put the first three ingredients in the bowl and mix with the spoon.</li>
<li>Mix in the sugar. When it gets difficult to stir, use your hands to mix it until it is smooth.</li>
<li> Add more sugar if the dough sticks to your hands.</li>
<li>Roll 1-inch balls and set them out on the cookie sheet till they get firm.
</li>
<li>If you want to make molded candies, press the mixture into the plastic candy molds. If you don&#8217;t have candy molds you could try using small lids or bottle tops; butter them first so the candy won&#8217;t stick.</li>
<li>When the candy firms up, pop it out of the forms and let the candy harden on a cookie sheet. These are a fondant-type candy, which means that they won&#8217;t get really hard.</li>
</ol>
<p><strong>Note</strong>: You can dip the balls in melted chocolate if you want, or roll them in coconut, chopped nuts, or dry cereal.</p>

<li>1 cup prepared NC muscadines </li>
<li>¾ cup self-rising flour</li>

<li>To prepare muscadines, remove pulp; cook pulp until seeds loosen, then press through sieve to remove seeds.</li>
<li>Add pulp to skins and cook until tender.</li>
<li>Add sugar to taste, some grated lemon peel and a sprinkle of apple pie spice.</li>
<li>Melt butter in glass pie plate.</li>
<li>Mix flour, sugar and milk in another bowl. </li>
<li>Pour flour mixture over butter.</li>
<li>Carefully pour prepared muscadines over the top. Bake at 350 degrees for 30 minutes.</li>
<li>Do not open oven until baking time is up.</li>
<li>Cake should be brown on top.</li>
</ol>
<p>Yield: 8 servings.</p>

<p>The Sweet Potato is the official State Vegetable of North Carolina, and more than 40% of all sweet potatoes are grown there. Sweet potatoes have been around for a long time, all the way back to prehistoric times, when they may have been a favorite snack of herbivore dinosaurs.</p>

<p>According to the North Carolina SweetPotato Commission:</p>
<blockquote><p>In 1543 DeSoto’s Spanish explorers found sweet potatoes growing in “Indian gardens” in what became Louisiana. The sweet potatoes were also cultivated in the Carolina area of North America before the European colonization.</p>
<p>The American &#8220;yam&#8221; is a copper-colored Sweet Potato with a golden-red flesh that is moist when cooked and has a sweeter flavor than the &#8220;drier&#8221; varieties, They are grown primarily in the South, most notably North Carolina (43,000 acres) and Louisiana with California, Mississippi, Alabama, New Jersey, Texas, and South Carolina following. </p>
<p>In Colonial days sweet potatoes were an item of trade and were shipped from the Carolinas out to northern cities. The potato was an essential food for all the colonies in the days before modern means of preservation.</p>

<li>1/2 cup (about 2) small bananas, mashed</li>
<li>1 cup evaporated skim milk</li>
<li>2 Tbsp brown sugar, packed</li>
<li>2 egg yolks (or 1/3 cup egg substitute), beaten</li>
<li>1/2 tsp salt</li>
<li>1/4 cup raisins</li>
<li>1 Tbsp sugar</li>
<li>1 tsp ground cinnamon</li>
<li>nonstick cooking spray as needed </li>

<li>In medium bowl, stir together sweet potato and banana.</li>
<li>Add milk, blending well.</li>
<li>Add brown sugar, egg yolks, and salt,<br />
mixing thoroughly.</li>
<li>Spray 1-quart casserole with nonstick<br />
cooking spray. Transfer sweet potato<br />
mixture to casserole dish.</li>
<li>Combine raisins, sugar, and cinnamon. Sprinkle over top of sweet potato<br />
mixture.</li>
<li>Bake in preheated 325 ºF oven for<br />
40–45 minutes or until knife inserted<br />
near center comes out clean.</li>

<li>Chinook salmon mature and return to fresh water to spawn after reaching an age of 2 to 7 years.</li>
<li>The scientific name for Chinook salmon, Oncorhynchus tshawytscha, is derived from the Greek works onkos (hook), rynchos (nose), and tshawytscha (the common name for the species in Siberia and Alaska).</li>

<p>This salmon recipe can be prepared with frozen fish and takes less than a half-hour to prepare.<br />
<i>Prep Time: 10 minutes Cook Time: 12 minutes Servings: 4</i></p>
<p><B>Ingredients</B>
<ul>
<li>1/2 cup roasted red bell pepper </li>
<li>1 cup grated Parmesan cheese, divided </li>
<li>1 Tablespoon cornstarch </li>
<li>1/4 to 1/2 whole jalapeno pepper, chopped </li>
<li>1 teaspoon minced garlic </li>
<li>1/4 cup chopped cilantro </li>
<li>1 cup chicken broth </li>
<li>1 package (1 pound) vacuum-packed prepared potato gnocchi (dumplings) OR 4 cups cooked orzo </li>
<li>4 Salmon steaks or fillets (4 to 6 oz. each), fresh, thawed or frozen </li>
<li>1 Tablespoon olive, canola, peanut or grapeseed oil </li>
<li>1 teaspoon lemon pepper seasoning</li>
</ul>
<p><B>Directions</B></p>
<p>In blender, puree red peppers, 1/2 cup Parmesan cheese, cornstarch, jalapeno, and garlic. Blend in cilantro and chicken broth. In a small saucepan, cook and stir pepper sauce over high heat until boiling. Reduce heat; cover and keep warm.</p>
<p>Cook gnocchi according to package directions; keep warm.</p>
<p>Rinse any ice glaze from frozen salmon under cold water; pat dry with paper towel. Heat a heavy nonstick skillet over medium-high heat. Brush both sides of salmon with oil. Place salmon in heated skillet and cook, uncovered, about 3 to 4 minutes, until browned. Shake pan occasionally to keep fish from sticking. </p>
<p>Turn salmon over and sprinkle with lemon pepper seasoning. Cover pan tightly and reduce heat to medium. Cook an additional 6 to 8 minutes for frozen salmon OR 3 to 4 minutes for fresh/thawed fish. Cook just until fish is opaque throughout. </p>
<p>To serve, add 1/2 cup Parmesan cheese to gnocchi. Portion 1 cup gnocchi onto each serving plate; drizzle with sauce. Top with salmon and drizzle with remaining sauce.</p>
<p><HR></p>
<p><i>Nutrients per serving: 482 calories, 23g total fat, 10g saturated fat, 44% calories from fat, 142mg cholesterol, 42g protein, 25g carbohydrate, 1g fiber, 799mg sodium, 330mg calcium and 1.4g omega-3 fatty acids.</i></p>

<p>The first grape to be actively cultivated in the United States, the Scuppernong is a variety of muscadine grape. It was named for the Scuppernong River, which runs from Washington County to the Albemarle Sound. The Roanoke colonists are believed to have discovered the Scuppernong “Mother Vineyard,” a vine that is now over 400 years old and has a trunk more than two feet thick.<BR><BR></p>
<p>Grape cultivation is a small but growing part of the North Carolina economy. </p></blockquote>

<li>raisins</li>
<li>1 cup water</li>
<li> 1⁄2 teaspoon cinnamon</li>

<ol>
<li>Preheat oven to 350 degrees F</li>
<li> Remove the core from the apples, leaving 1⁄2 inch of the core at the bottom of the apple. Peel top 1/3 of apple.</li>
<li> Arrange apples in baking pan. Then fill the core of the apple with raisins, and sprinkle with cinnamon. </li>
<li>Pour water into pan.</li>
<li>Bake 45 to 60 minutes or until tender. Spoon liquid from pan over apples one or two times during baking. </li>

<blockquote><p>The state animal was selected by a vote of Illinois schoolchildren in 1980. Candidates were nominated by the General Assembly and the Illinois State Museum. The children selected the White-tailed Deer, and a bill, effective January 1, 1982, was passed by the General Assembly and signed into law by Governor James R. Thompson.</p></blockquote>
<p><strong>Ingredients for Deer Barbeque</strong></p>
<ul>
<li>1- 16 oz bottle barbeque sauce</li>
<li>3 deer ham steaks</li>
<li>3 tablespoons honey</li>
<li>barbeque seasoning</li>
</ul>
<p><strong>Directions for Deer Barbeque</strong></p>
<ol>
<li>Coat deer steaks with barbeque seasoning.</li>
<li>Place deer steaks in crock pot. </li>
<li>Pour in the remainder of the sauce and honey.</li>
<li>Cook on low heat for 10 hours.</li>

<p>It is important to note that white-tailed deer meat can and is easily substituted for beef in recipes using tomatoes or tomato juice.  Ground white-tailed deer meat makes for a tasty burger, but most people in our area like white-tailed deer meat either in a sausage form or in a stew.</p>
<p>White-tailed deer meat is lean and tends to be a chewier, tougher red meat than a finely fat-marbled red meat such as beef or pork.  To tenderize white-tailed deer meat (also known as venison) tomato sauce or tomato juice is often used.</p>
<p>Slow cooking white-tailed deer meat (venison) in a slow cooker is an ideal solution for tenderizing and cooking this meat at the same time.  The process of slow cooking breaks down the toughness of meat; thus a slow cooker recipe using tomatoes, salsa or tomato juice are ideal!</p>

<ul>
<li> 4 cups water
<li> 1 (16-ounce) bag frozen, Southern style hash browns
<li> 1 cup frozen chopped onion or 1 medium onion, chopped
<li> 1 pound ground white-tailed deer, cut into bite-size pieces (Or extra-lean ground beef)
<li> 2 (4-ounce) cans mushroom stems and pieces, not drained
<li> 1 (2 1/2-ounce) envelope dry onion soup mix
<li> 1 (16-ounce) jar chunky salsa</ul>

<ol>
<li>  Spray a slow cooker with nonfat cooking spray.
<li>  Put into the slow cooker the water, hash browns, onion, deer meat, mushrooms, onion soup mix, and salsa and stir until well mixed.
<li>  Cover and cook in the slow cooker on high for 4 hours or on low for 8 to 9 hours.
<li>  If desired, salt and pepper to taste.</ol>
