<p>According to the Illinois State Museum:</p>
<blockquote><p>The state animal was selected by a vote of Illinois schoolchildren in 1980. Candidates were nominated by the General Assembly and the Illinois State Museum. The children selected the White-tailed Deer, and a bill, effective January 1, 1982, was passed by the General Assembly and signed into law by Governor James R. Thompson.</p></blockquote>
<p><strong>Ingredients for Deer Barbeque</strong></p>
<ul>
<li>1- 16 oz bottle barbeque sauce</li>
<li>3 deer ham steaks</li>
<li>3 tablespoons honey</li>
<li>barbeque seasoning</li>
</ul>
<p><strong>Directions for Deer Barbeque</strong></p>
<ol>
<li>Coat deer steaks with barbeque seasoning.</li>
<li>Place deer steaks in crock pot. </li>
<li>Pour in the remainder of the sauce and honey.</li>
<li>Cook on low heat for 10 hours.</li>

<p>It is important to note that white-tailed deer meat can and is easily substituted for beef in recipes using tomatoes or tomato juice.  Ground white-tailed deer meat makes for a tasty burger, but most people in our area like white-tailed deer meat either in a sausage form or in a stew.</p>
<p>White-tailed deer meat is lean and tends to be a chewier, tougher red meat than a finely fat-marbled red meat such as beef or pork.  To tenderize white-tailed deer meat (also known as venison) tomato sauce or tomato juice is often used.</p>
<p>Slow cooking white-tailed deer meat (venison) in a slow cooker is an ideal solution for tenderizing and cooking this meat at the same time.  The process of slow cooking breaks down the toughness of meat; thus a slow cooker recipe using tomatoes, salsa or tomato juice are ideal!</p>
<p>People who are “meat and potato” eaters tend to especially like this soup. The tomatoes in the salsa helps to tenderize the deer meat.

<li> 4 cups water
<li> 1 (16-ounce) bag frozen, Southern style hash browns
<li> 1 cup frozen chopped onion or 1 medium onion, chopped
<li> 1 pound ground white-tailed deer, cut into bite-size pieces (Or extra-lean ground beef)
<li> 2 (4-ounce) cans mushroom stems and pieces, not drained
<li> 1 (2 1/2-ounce) envelope dry onion soup mix
<li> 1 (16-ounce) jar chunky salsa</ul>

<li>  Spray a slow cooker with nonfat cooking spray.
<li>  Put into the slow cooker the water, hash browns, onion, deer meat, mushrooms, onion soup mix, and salsa and stir until well mixed.
<li>  Cover and cook in the slow cooker on high for 4 hours or on low for 8 to 9 hours.
<li>  If desired, salt and pepper to taste.</ol>

<p>The first known pecan pie was created by the New Orleans French.&nbsp; It is a uniquely American dessert, mostly popular in the Southern states of Texas, Louisiana, Georgia, and Oklahoma where pecan pie is the official state dessert.</p>
<p>This Very Chocolate Pecan Pie recipe comes to us courtesy of the Marion Farr, Midland County, Texas Cooperative Extension, and features a fun chocolaty slant on the traditional pecan pie recipe.</p>

<li>  3 eggs, beaten until frothy</li>
<li>  1/3 cup sugar</li>
<li>  1/6 cup dark corn syrup</li>
<li>  1/6 cup light corn syrup</li>
<li>  1/6 cup honey</li>
<li>  1 stick butter</li>
<li>  12 oz. semisweet chocolate chips</li>
<li>  1/4 cup flour</li>
<li>  1/8 tsp. salt</li>
<li>  1/4 tsp. vanilla</li>
<li>  1 cup pecan pieces</li>
<li>  1 &#8211; 9-inch pie shell, unbaked</li>
</ul>
<p><strong><em>Directions</em></strong></p>
<ol>
<li>Preheat oven to 325 &deg;F. </li>
<li>Melt 2 tablespoons of the butter. </li>
<li>Cut up the rest of the butter and melt with 2/3 to 3/4 of the chocolate chips.  </li>
<li>Blend all ingredients together and pour mixture into unbaked pie shell,  and bake for 40 minutes or until set.</li>

<p>Cooking and Preparation Time:  35 Minutes</p>
<p><a name="Ingredients"></a><H4>Ingredients</H4></p>

<li> 1 pkg. (14 oz.) Fast Fixin‚Äô Sirloin Philly Beef Steak</li>
<li> 1 teaspoon olive oil</li>
<li> 1 Cup diced onion</li>
<li> 1 Cup diced carrot</li>
<li> 1 small zucchini, diced</li>
<li> 4 Cup beef broth</li>
<li> 1 can (14 oz.) diced tomatoes</li>
<li> 1 jar (26 oz.) Blessetti&#8217;s Savory Roast Beef Gourmet Italian Pasta Sauce</li>
<li> 1 teaspoon dried leaf oregano</li>
<li> 1 teaspoon dried leaf basil</li>
<li> 1 bag (20 oz.) refrigerated cheese stuffed tortellini</li>
<li> 1/4 C chopped flat leaf parsley</li>
</ul>
<p><a name="Directions"></a><H4>Directions</H4></p>
<ol>
<li>  In a large skillet, cook Philly Beef Steak according to package directions.</li>
<li>   In a large Dutch oven or stockpot, heat olive oil over medium-high  heat. Add diced onion, carrot and zucchini; cook, stirring frequently,  until vegetables are tender, about 5 minutes. </li>
<li>  When Philly Beef Steak is done, drain well and add to stockpot. </li>
<li>  Add beef broth, tomatoes, pasta sauce and herbs; stir to combine. Increase heat to medium. </li>
<li>  Bring mixture to a boil, reduce heat and  simmer uncovered for 20 minutes. </li>
<li>  Add tortellini and parsley to pot, and  cook for 9-10 minutes. </li>
<li>  Serve with crusty bread and enjoy!</li>

<li>  1 egg white, slightly beaten</li>
<li>  2 cups pecan or walnut halves</li>
<li>  1/3 cup sugar</li>
<li>  2 teaspoons ground cardamom</li>

<ol>
<li>  Heat oven to 300F¬∞.
<li>
<li>Grease 15 x 10 x 1-inch  pan with shortening or cooking spray.</li>
<li>In medium bowl, mix egg white and  pecan halves until pecans are coated and sticky.</li>
</ol>
<p>In small bowl, mix sugar and cardamom; sprinkle over pecans.  Stir until pecans are completely coated. Spread pecans in a single  layer in pan.</font></h3>
<h3 style="font-weight: normal; font-family: Verdana,Arial,Helvetica,sans-serif;"><font size="2">Bake about 30 minutes or until toasted. Cool completely or serve slightly warm. Store tightly covered up to 3 weeks.</font></h3>
<p><font size="2"><span style="font-family: Verdana,Arial,Helvetica,sans-serif;">New twist: Ground cinnamon can be substituted for the cardamom; both spices are perfect for the holidays.</span></font> </p>
